Are you interested in something that does a specific task exceptionally well, creating an entire virtual life form, making you're programs structured in the most "organic" way possible, or something else? I personally have always found NLP (natural language proccesing) to be the most important part.

The fact that artificial intelligence can respond to real life situations in the same manner humans can is what really draws my attention.
